QUICK PARCELS

U need:


Lijaat or any pappad : 6
Grated paneer: 1 cup
Grated cheese: 3 tablsp
boiled and mashed peas: 1/4 cup
green chilles(minced fine): 2 tsp
coriander leaves: 2 tsp
onion(chopped) 2 tablsp
kitchen king masala: 1 tsp
salt to taste
oil to deep fry
oil: 2 tablesp


Method:


Heat 2 tablesp oil in a kadai.When hot add the minced green chillies and kitchen king masala.Add onion and saute well for few mins.Add coriander leaves and mashed peas.Stir well.Add the paneer and salt.Saute for a few mins and remove from gas.Cool.


Now add the grated cheese.Stir well.The filling is ready.


Cut the pappads into two. Take one half and Put 2 tsp of the filling and spread well, moisten the edge of the pappad with a little water and fold one side to the other sealing the filling well.Press the corners gently.Keep aside.Make the same parcels with the other pappad pieces.


Heat oil in a pan.When hot,lower heat and deep fry the pappad parcels till golden brown.


Serve hot with a sauce of your choice.

QUICK TOMATO RASAM

U need:
tomatoes: 3(medium size)
small onions(shallots):4
red chilli powder: 1 tsp
coriander leaves: 1/4 bunch
crushed pepper: 1 tsp
turmeric powder: 1/2 tsp
jeera: 1/2 tsp
red chilli: 1
mustard: 1/2 tsp
curry leaves: few
dhaniya powder: 2 tsp
salt to taste


Method:
1. Wash tomatoes.In a pressure cooker put the tomatoes, coriander leaves,curry leaves,red chilli powder,dhaniya powder,salt turmeric powder,onions and 1 cup water.Pressure cook.
2.Cool and mash well .Extract the juice by adding 1 cup water and strain into a dekchi.
3.Heat the rasam,stirring gently.In another kadai add 2 tsp ghee.Add mustard seeds,red chilli,jeera and pinch hing.Pour this bhagar over the simmering rasam.Add crushed pepper.Cover and switch off the gas
4.Just before serving garnish with finely chopped coriander leaves. Serve as an appetizer in small bowls.

NUTTY CITRUS SALAD

U need:
Orange segments: 2 cups
grapes: 1/2 cup
green papaya(if you have);1/2 cup
onion diced: 2 tsp
olive oil: 1 tsp
honey: 2 tsp
roasted peanuts/almonds: 2 tsp
lemon juice: 1 tsp
salt and pepper to taste


Method:


1. In a bowl combine orange segments, grapes,papaya pieces,onion and toss well.


2. Mix in honey,olive oil,roasted almonds/peanuts,lemon juice,salt and pepper.
3.Toss well and serve this refreshing salad with fresh bread and lemon butter.




LEMON BUTTER:


In a small bowl put 25 gms salted butter.To this add 1 tsp finely minced coriander leaves,juice of 1/2 lemon and a few lemon rind.Mix well with a spoon.Apply on fresh toast or dinner rolls and have it with the Nutty salad.


This salad is refreshing to eat on a hot summer day.

SUMMER COOL (MOCKTAIL)

U need:
Apple juice: 100 ml
Pineapple juice: 100ml
Green mango syrup : 15 ml
Ice cubes: 2


Method:
1. In a glass jar combine all the above .
2. Add the ice cubes.Shake well.
3.Pour in tall glasses and serve.




 MERRY BERRY (MOCKTAIL)


U need :


Watermelon juice: 80 ml
Canberry juice: 100 ml
Apple Fizz: 1 bottle (chilled)


Method:


1. Combine the juices in a glass jar.
2.Add chilled Apple fizz.
3.Stir well and serve in tall glasses.
