USAL PAV


STREET FOOD: MAHARASHTRA

U need:
Dry white peas : 2 cups
Onions: 2 medium chopped
Garlic: 2 pods peeled
Ginger: 2" piece peeled and chopped
green chillies: 3
red chilli powder: 1/2 tsp
turmeric powder: 1 tsp
dhaniya powder: 2 tsp
garam masala: 1 tsp
chat masala: 1 tsp
amchur: 1/2 tsp
coconut slices: 2 tsp
tomato: 1 medium
jeera: 1 tsp
salt to taste
lemon juice: to taste
coriander leaves: 2 tsp
Oil: 2 tablsp
Method:
1. Soak white peas in water for 4 hours.
2.  Clean well and pressure cook in 21/2 cups water for 3 whistles.
3. Heat 2 tablsp oil in a frying pan.When hot add jeera and saute. Now add chopped onions and fry. Add ginger and garlic.Saute further. Add chopped tomato,green chillies and cook further. After 5 mins add chilli powder,dhaniya powder and garam masala.Stir well for another 5 mins.
4. Switch off the stove and cool the mixture. Grind to a smooth paste with the coconut slices.
5. Transfer the paste back to the frying pan and cook further. Add amchur and chat masala. Add the cooked white peas along with the water and simmer well till the usal is semi dry.Add salt and coriander leaves.
6. Mix well . Transfer the usal  to a serving bowl. Garnish with some more chopped coriander and a dash of lemon juice and sprinkle some more chat masala on top. Serve with toasted pav buns.

Note: Tasty and yummy to eat this street food is loved by one and all. Enjoy making this dish and taste a slice of Mumbai. The spiciness can added to individual's taste.
